Apples are one of the most popular foods around world. However, recently there has been a growing interest in preservation traditional apple varieties. This grown due to studies that suggest apples contain higher amounts polyphenolics and antioxidant activity compared commercial ones. Polyphenolics have gained much attention because their beneficial effects on human health, thus they became quality trait apples. Traditional varieties same groups polyphenols as ones those flavan-3-ols, phenolic acids, flavonols, dihydrochalcones, anthocyanins. proved be rich some individual polyphenolics, such procyanidins B1, B2, A2, epicatechin, quercetin-3-rutinoside, chlorogenic acid, etc. chapter is underlying great potential source natural antioxidants.
